What is oolong tea? The “black dragon” among teas
The name may sound mystical at first. Wulong or Oolong translates as Black Dragon. According to an old legend, a dragon once frightened a tea farmer while he was working. The farmer ran away, leaving his harvest behind. The leaves oxidized in the sun. When he returned, the tea was dark, but the result tasted delicious. Today, of course, production is no longer a matter of chance. It is true craftsmanship.
Oolong is a semi-fermented tea. This means that it lies exactly between unoxidized green tea and fully oxidized black tea. The tea masters shake the wilted leaves in large bamboo baskets. This causes the edges of the leaves to break open slightly. Cell sap escapes and reacts with the air. The edges turn dark. However, the center of the leaf remains green and fresh. Tea connoisseurs pay close attention to this characteristic.
The result is loose oolong tea in many different forms. There are roughly two types:
- Light oolongs are only lightly fermented and taste similar to green tea. These leaves are often artfully rolled into small balls.
